I went to the local supermarket and took a look at the Canned Vegetables. Aside from Spinach and Collard Greens, I could see NO nutritional information worth mentioning for ANY of the canned vegetables. No vitamin A, C, anything worth anything. Why do we buy them?

Some of you are missing the point.
There is NO nutrition in the cans.
So, what I really am asking is:
If you want to have something in stock for emergencies, and you want to spend $100 on a bunch of cans, wouldn't you rather spend your money on, say, cans of Ravioli rather than on cans that are basically empty? By the way, WHAT state in this country has a supermarket where there are no fresh fruit or vegetables?

I don't, for the most part. The only canned veggies I buy, almost, are diced tomatoes and Taco Bell re-fried beans. And when I have a cold, the occasional can of Cambell's tomato soup, because my mom always gave me that when I was sick (although I know it is not helping me any---)
Once in a while I use frozen vegetables, but mostly buy fresh--- from local farmer's markets and stands whenever possible.
Healthiest and most ecological to buy your food as fresh as you can, grown or produced as near to your home as you can get them, and processed as little as possible.

I personally dont eat anything that is not fresh-sure, the canned stuff is convenient, but I can steam some fresh spinach just as quick as I can heat a can-makes no sense eating empty calories, full of salt and preservatives....yuck!

When you buy 'fresh' vegetables are you sure they haven't been in storage or even frozen before they arrive at the supermarket ?

Its easy u dont have to cook when u are busy, just open the can, instead of chopping the vegetable and wait for them to get cooked.
