He will, in the end. It is through His victory over evil that God's glory is truly shown.
As for right now, evil is present in the world because human being are present in the world. We are fallen creatures, inherently evil. To change this would mean removing our capacity for free will, and God wants WILLING followers, not robots.

First. The world WAS created without evil. Mankind screwed that up and have been screwing it up ever since. You have the choice to do right or wrong, to sin or not sin, the choice to do good and not evil--Do you always do the right, sinless, good thing? If God eliminated all evil we would have few choices to make on our own in life. We'd sort of be like puppets or a computer program. We'd do only the things the puppeteer or computer programmer wanted us to do. We'd have no choice, no free will, to make up our own mind and do what we think is right or best. God has shown us what's right and wrong. God has given us the way to forgiveness, salvation and eternal life. It's up to us to accept what He has given.

Adam and Eve withdrew themselves from under God's rulership. They went out on their own, doing what was good or bad according to their decisions. So the important issue or question raised was :" Does God have the right to be the absolute ruler of humankind? Is he the one to decide what is good orbad for humans? Is he the one to say what is right conduct and what is not? Or can man do a better Job of governing himself? Whose way of ruing is best? Can humans, under the invisible direction of Satan, rule successfully without God's direction? Or is God's guidance needed in order to set up a righteous government that will bring lasting peace to the earth? All such questions were raised in this attack on God's sovreighnty, on his right to be the only and absolute ruler of humankind.
Of course as soon as the rebellion happened God could have destroyed the three rebells. there was no question that he ws stronger than Satan or Adam and Eve. But destroying them would not have settled matters in the best way. For example, it would not have answered the question of wether humans could successfully rule themselves without help from God. So he allowed time to settle the important issue that was raised.

Evil is not a force unto itself. A rotten apple starts rotting from a perfect apple. Evil is the destruction of Truth. The decaying of Truth. Restoring Truth, revokes Evil. Opposite of Evil is livE. Opposite of Lived is deviL. The ultimate restoration is "New earth and New heavens". When Christ comes back for the final time.
God will ultimately destroy Evil. But to destroy evil completely, God has to destroy man, whose "breadth-spirit" man still embodies. The time will come for annihilation. For now man will be judged according to their evil deeds. Man is still in control.
To stop evil is to stop freewill. To stop a murder is to intervene voluntarily violating the law of freewill. Freewill once give is free to roam. When we have given a present we have relinquish the right to manipulate that gift. Freewill is the basis of creation, and of relationship. Of a love relationship.

coo: From the very Beginning, God pitted Satan - a Arch Angel against mortal humans namely, Adam and Eve, knowing full well, that they would be conned in by him [Satan] and sin ... causing their human progeny for generations to bear the consequences for their [Adam & Eve] actions. God created evil; (see: the book of Isaiah, chapter 45, verse 7, of the Bible). Obviously, He [God] was launching a Master plan for the human creation. Evil is well familiar to Satan and God knows all about "evil" but ... humans have to be made aware that they are not "good" in their human, mortal state; therefore, they are evil [reality] . Evil's purpose is two-fold. Firstly; evil shows us that we are not God. Secondly; evil when contrasted against "holiness" shows humans that since he or she is "evil" , God desires a relationship with them to impart spirituality to him or her, within that relationship and humans having that spiritual relationship are then, sanctified (placed apart for a holy purpose) . Thus; you can see why "evil" is retained to fulfill God's purpose for us humans here, now, on the earth.

It's not a question of why not, It's a question of when. Some day God will eliminate all evil when He creates a new earth. (Rev21-22).
