If referring to the Indian Sambar (Cervus unicolor) then seems like a fine caliber choice.
If referring to the Philippine Sambar (Cervus mariannus) it is overkill defined.

My only thought is, where are you hunting.

Edit: I'm assuming this is a rifle which you already own, not one you are contemplating on purchasing with this hunt as a main factor. If you don't yet own the rifle then it may be more then what you need but it is a very fine rifle and if you have the money I would highly suggest buying it, as you can hunt a variety of large game with one. If you don't have the money and deer is the extent of what you hunt I would opt for a different caliber in single shot or bolt action.

The entire point of a double rifle is to have a completely redundant system so that you have a second shot when facing a dangerous game animal, even if you have some type of malfunction. Since the deer are not dangerous game, a double rifle is not needed. What's more, a double rifle is expensive, very expensive when compared to a conventional bolt action rifle.

The .338 seems a bit over the top in terms of power. However if you can shoot it accurately and think you need it then go ahead. But if you have any tendency to flinch or have poor shot placement, try stepping down to one of the .30 caliber magnums.

I didn't know any doubles were offered in .338 Winchester Magnum. Yes, it has the stopping power to drop a 600 pound deer, but what range will you be shooting at? Wouldn't a conventional bolt action .30-06 or larger with a good scope serve you better? Double rifles are dangerous game rifles. Unless you need that second quick shot you are paying a whole lot for a double. If money is no object go for it. Or you might consider a Ruger #1 fitted with a good glass in .338 or larger caliber.

Are you concerned that this deer may eat you or something?
It’s not like your taking on a card carrying member of Africa Big Five, it’s a Deer.
308 or 30-06 is more the capable, why over gun?

If you're having a double built, why not go for one of the fine old British rimmed, low-pressure cartridges in the same caliber range? A 350 Rigby #2 jumps to mind.
