STORING: Chocolate should be stored in a cool (60 - 70 degrees F) (15 - 21 degrees C), dry (less than 50% humidity), and odor-free environment away from direct heat and sunlight.

If stored properly, dark chocolate and cocoa will last for years. White and milk chocolate can only be stored for about 10 months because of the milk solids they contain. When chocolate is not stored properly grayish-white streaks will appear on the surface of the chocolate, called bloom

The fridge may be cool...but it isn't dry. It's quite humid inside the fridge - which is why the crisper drawers have those little sliders to set how much humidity you want inside since some veggies like it dryer than others. If the jar is sealed, this won't make a difference though. But I would keep the jar away from other foods that tend to pick up food odors - like butter and cheese.

Never store chocolate in the fridge- too much moisture and too cold, it will cause it to bloom- causing the cocoa butter to seperate.
Store in a cool dry place where the temperature doesn't fluctuate too much and not around strong odors.

I used to work in a Belgian chocolate shop. We kept our chocolates in a cabinet that maintained about 20degrees. We also advised our customers not to put chocolate in the fridge because eating them straight from cold doesn't allow most of the flavours to come out.

If you live in a hot climate though, then I guess cold chocolates with less flavour is better than a puddle of chocolate!

By the way, you can see how good a quality a chocolate is by how long it melts in your fingers. The quicker it melts the more fat is in it so the better it tastes!

It all depends on what kind of chocolate you have....

Chocolate wafers(candy making) should be stored in a dry and cool place. If chocolate wafers get any moisture in them they will melt weird and get crumbly.

Chocolate chips could be refrigerated/freezer but not necessary.

it should be stored in a fridge so it would stay cool,not in a dry place or it would melt.
