Italian translation of "pats" is palline (not fiocchetti !!).
Correct sentence in Italian is
" e metti delle palline di burro su ogni pezzo di pollo"

Edit: Just to clarify, I've discussed it with martox45, and 'palline di burro' are small spheres filled with butter, whereas 'fiocchetti di burro' are small bits of butter cut with a knife. So I guess it depends on what the recipe itself is referring to exactly when it says 'pats' of butter. I've given the meaning of both so you can choose which of the two best fits for your particular recipe. If in doubt, martox45's answer of palline should be fine.
