it's not fish sauce, smells like 30 farts

If it smells like sweaty feet, it's probably fish sauce. Hard to believe something that smells that awful can taste so good.
If it smells like a dead animal, it's kimchi -- pickled cabbage which tastes even more disgusting than it smells.

Kimchee is one possibility. It's fermented cabbage that tastes far better than it smells. It looks something like the sauerkraut that time forgot.
Nuoc mam, aka fish sauce, is another likely culprit. It's a very salty, smelly sauce that's used in many Vietnamese dishes. Again, it tastes a lot better than it smells.

sounds like either nuoc mam, which is fermented fish sauce, or durian fruit, which is usually eaten raw. Believe it or not, both taste good. Nuoc mam is used to give bland foods some flavour, so if you use it to flavour boiled rice, you've got a dirt-cheap dish that leaves you with the illusion that you've had a square meal. In even the poorest villages in Vietnam they produce their own rice and nuoc mam from locally-caught fish and salt. Durian fruit smells vile but it's got a rich sweet delicious pulp inside.

It's probably not the vegetable itself, but rather the spice used to cook it in. I have no idea what it could be. Why don't you ask your house mate.
