Chinese Fried Rice
This has the flavor those other recipes are missing. Tastes like take-out.
4 servings 28 min 10 min prep
3/4 cup finely chopped onions
2 1/2 tablespoons oil
1 egg, lightly beaten
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or chickens, chopped
1/2 cup finely chopped carrots (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce
Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
Allow wok to cool slightly.
Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
Set out additional soy sauce on the table, if desired.

A good rice steamer and a little practice. If you cook the same amount of rice every time, you will perfect it. The only problem is that you can't use the same proportion of rice to water all the time. Start with a rice steamer and 1 cup of rice to 2 cups of water. As you increase the amount of rice, decrease the amount of water by about 1/4 cup for every 1/2 cup of dry rice until you get to 4 cups of rice and 6 1/2 cups of water. After that the proportion should remain at about 1 cup of rice to 1 1/4 cups of water.

You have to use special rice, that you can buy at the oriental market, and to make it yummy and sticky, wash it until the water runs clear (place it in a strainer, and keep running cold water over it until the water runs clear), and then, the most important thing is to use a rice cooker! Get yourself a rice cooker. You can find them pretty inexpensively, but I do suggest investing in a more expensive one. It is one of those things where you get what you pay for. Enjoy!

rice in a chinese rest. is steamed. the perfect recipe i have is 3 and 1half cups of boiling water ,1half teaspoon salt and 1 tablespoon of butter. add in a large casserole dish and add 1and1half cups of rice (in a bag, not minute rice or par boiled) stir until the butter is melted, place in a 350 deg. oven for 45min. (no peeking) perfect steamed rice every time.
if you dont like this old fashioned recipe, they have rice cookers on the market. check out larger stores maybemacy*s or even walmart

most often in a rice cooker. the secret is not how to cook it, but what kind you use. if you buy CalRose brand and cok it on top of the stove it is easy...
place 2 cups cold water in saucepan that has tight fitting lid, add 2 cups CalRose rice and salt to taste. place over high heat until it comes to a boil, then cover and reduce heat to LOWEST setting. set timer for 21 minutes and do not open lid until that timer goes off!
when timer goes off, turn off flame and fluff rice with fork. cover for an additional 5 minutes and serve.

NORMAL RICE COOKER. TIS U NEED TO TRY N ERROR FEW TIMES IF U TRY TO DO IT AT HOME.. DIFFERENT TYPE OF RICE NEED DIFFERENT LEVEL OF WATER WHEN U COOK IT IN RICE COOKER.

I worked for Chinese restaurant. outside everything was clean and perfect, the kitchen, a mess, dirty, they recycle food that comes back from table etc. It was a fairly expensive restaurant. I've been to another one, it was fancy and everything looked and tasted nice. I just became cautious with Chinese restaurant. I saw one Chinese cleaning his throat in a water fountain eeeeww, I guess is the culture. But I know not all chines es are like that.
By the wasy, there is no secret to it. They just do it every day.
