Oatmeal Chocolate No-bake Cookies
Ingredients:
2 cups of white sugar
1 stick of butter or margarine
1/2 cup of milk
1 teaspoon of vanilla
1/2 cup of peanut butter
2 tablespoons of cocoa powder
3 cups of oatmeal
Preparation:
Mix the first three ingredients in saucepan. Boil for one minute. Remove from the heat. Add the remaining ingredients. Scoop and drop by tablespoon onto wax paper and cool.

"These are easy no bake cookies that call for any flavor of INSTANT pudding, so you can get a variety of flavors to suit your particular taste."
Original recipe yield:
3 - 4 dozen
INGREDIENTS
2 cups white sugar
3/4 cup butter
2/3 cup milk
1 (3.9 ounce) package instant chocolate pudding mix
3 1/2 cups quick cooking oats
1/2 teaspoon vanilla extract
DIRECTIONS
Mix together the sugar, butter or margarine and the milk in a large pot and bring to a boil. Boil for 2 minutes.
Turn off heat and add in the pudding, oats and vanilla. Mix well and let stand for 5 minutes.
Drop by spoonfuls onto wax

INGREDIENTS
1 1/2 cups butter or margarine, softened
3 cups packed brown sugar
3 eggs
1 tablespoon vanilla extract
5 1/4 cups all-purpose flour
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon cream of tartar
DIRECTIONS
In a large mixing bowl, cream the butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Transfer to a larger bowl if necessary. Combine flour, baking powder, baking soda and cream of tartar; gradually add to the creamed mixture. Drop by level tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350 degrees F for 10-12 minutes or until golden brown. Remove to wire racks to cool.

2 3/4 cups coconut
1/4 cup ground almonds
Method:
preheat oven to 160 Beat egg whites until soft peaks form,beat in egg yolks,one at a time,,Gradually add/combine cocoa powder and sugar,beat well,,Fold coconut and almonds into the chocolate meringue mixture,,Roll tablespoons of mixture into a ball,place 6-8 biscuits onto a greased baking tray and place into oven for around 15mins

Beat in lemon zest, yolk, extract and salt. Add flour and beat just until blended (if dough is very stiff, beat with wooden spoon).
Roll dough by tablespoonfuls into balls. Set dough balls on ungreased heavy baking sheets, spacing 3 inches apart. Dip bottom of 2 1/2-inch-round glass into sugar. Press down onto 1 dough ball, flattening into 1/4-inch-thick round. Repeat with remaining dough balls.
Bake until cookie edges begin to brown, about 10 minutes. Transfer cookies to racks and cool. Sift powdered sugar over tops.
(Can be prepared 3 days ahead. Store at room temperature in airtight container.)
