I follow all the directions in the recipie book but the ice cream never end up frozen. its one of those ice cream makers where it needs no ice, all you have to do is put the frezzer bowl in the frezzer overnight. Its still a liquid when i take it out. could it be from the alcohol from the vanilla extract that prevents it from freezing?

The bowl would be better off freezing for more than only one night. I freeze mine for 2-3.

Sorry man, it's gotta freeze. There's a liquid solution between the outer and inner layer of that bowl that needs to chill for that period of time. The liquid solution goes below the freezing point so it is very cold. Since good ice cream texture comes from having very fine, well distributed ice crystals, my guess is that the bowl and the solution inside have to be really cold so that the once you put the ice cream mix in, it starts freezing immediately. As the machine runs, it dislodges those ice crystals that form on the bowl, which get stirred and suspended in the mixture as the machine runs, which results in finer, well-distributed ice crystals and an overall a better texture. If you try just chilling it in the fridge, the ice cream might have a horrific texture since the machine has to chill both the bowl and the mixture to freezing, resulting in inconsistent ice crystals distribution and sizes.

freeze it at -26 degrees and then when frozen soften it with a temperature of 56
