Hey Low Carbs!
Apparently some people aren't aware that rice, potatoes, etc... aren't low carb.
The people that answered celery sticks are definitely right. I've worked in a pub, and have been too several pubs and almost all of them serve wings with either celery sticks, carrot sticks or both. You can use a low carb/no carb dressing (cream based) with either blue cheese or ranch. The dressing cuts the heat from the hot wings, but if you're serving honey garlic or teriyaki, you really don't need any dip for the veggies.

I would go with cole slaw...make it without the creamy mayo dressing for a no carbs version. Try a vinegar based dressing, instead. Also cools the heat of the wings and since the vinegar based slaw is a little tangy, it is a nice compliment. Easy to make a really delicious.
Cole Slaw with Vinegar Dressing
1 large head of cabbage, finely shredded
1 medium bell pepper, finely chopped
1 medium sweet onions, finely chopped
2 carrots, grated
.
Dressing:
1 cup sugar
1 teaspoon salt
2/3 cup vegetable oil
1 teaspoon dry mustard
1 teaspoon celery seed
1 cup cider vinegar
PREPARATION:
Combine coleslaw vegetable ingredients; chopped cabbage, chopped bell pepper, chopped onions, and grated carrots in a large serving bowl.
In a saucepan over medium heat, combine remaining ingredients; bring to a boil.
Simmer, stirring, until sugar is dissolved; pour over vegetables and toss well. Cover and refrigerate until thoroughly chilled.
Enough slaw for 8 to 10 servings.

I think a chopped salad, crispy and full of crunchy veggies would be a good side. I would get out a mandolin so you can slice the veggies thin. Recommend romaine and baby spinach. Thin sliced or shredded: carrots, cucumber, celery, radishes. grape tomatoes. Top with blue cheese crumbles. Make a lemony/olive oil dressing. The cool crunchy salad will be a good match for hot spicy wings.

Coleslaw is great and the cabbage has no carbs but the sauce has some. Tossed salad is a good choice too, keep it to just veggies and the only carbs will be in the dressing, unless you use oil and vinegar, no carbs in that.

The best thing with chicken wings is crispy tater skins with cheese. The skins do not have carbs.
Bake potatos in microwave for 4 to 6 minutes. Remove from oven after baking; let stand for 5 to 10 minutes. cut in half lengthwise. Let potato cool until it can be handled. Gently SCRAPE the inside of the potato OUT, do not scrape all the way to the skin (leave a little potato around the edges and on the bottom). Reserve potatoes for another meal, if desired. Season skins with salt. Sprinkle cheese, bacon or any toppings you want on each one. Place in small pan with a little melted butter. Place under broiler until golden brown. Remove from broiler and spread inside of each potato with 1 tablespoon of sour cream. Serve warm.

Since the wings are hot, go with a nice big veggie salad. Start with lettuce and add whatever other veggies you love! I love celery with my wings, I dip it in the dip too.

Rice (plain or fried), or try white bread with chopped up celery and carrots with a dip.
Probably not mashed potatoes.
