I have 1/2 a head in the frig for a week now and it still looks good. Is it still good to use?

It can last around three weeks. The leaves may wilt on the outside, but just pull them off b/c it is still fresh on the inside.

Well, fresh juice can spoil at different rates. Because it's not pasteurized it means that bacteria present on the outside of the fruit, in the container before squeezing and even in your juicer can severely diminish the life of your juice. Furthermore, once the juice is squeezed, the important minerals begin to break down. The longer it sits, the less potent it is. However, consider making a big batch and freezing servings. You can purchase resealable cups from tupperware and even gladware. Make a big batch, pour in a cup, put in the freezer. Before going to bed, pop one in the fridge and drink it up in the morning. Or, you can take it out of the freezer and put in your bag on your way to work. By noonhour it'll be ready to sip. I would estimate that you would get a few days out of the unpasteurized juice. Here's how to pasteurize if you want to get into it: # Pasteurize the juice using a double-boiler. Heat the juice to about 80º C (176º F), stirring frequently. Keep it at 80º C for at least 2 minutes. This will make sure that all E. coli 0157:H7 bacteria, as well as other organisms (moulds, etc.) are destroyed. # Pour the juice into clean, preheated bottles. Seal with new caps. The bottles must be preheated to prevent them from breaking due to heat shock. # This juice should keep a fairly long time if poured into bottles while it is still hot. The heat will destroy airborne yeast and mould. If the juice is bottled after it has cooled down, it will have a limited shelf-life, even if it is refrigerated.

It's good until the leaves wilt, makes sure you wash it off.
