NO U LEAVE THE SKIN ON!!! AND U DEEP FRY WITH NO BATTER ON IT. THE SKIN IS WHAT MAKES it crisp and you cook them until their light brown u will know when they r ready and the best sauce is u won't believe this but take Texas Pete a medium size bottle and put a pat of butter in it and heat it covered on the stove on low heat just let it slowly heat while u r cooking your wings and don't cook a whole bunch at one time just cook say 8 or so and wait until u have your whole batch whether ot be 20 or whatever after they r all done pour the sauce over them after u have drained the grease off of course and just stir the wings in the sauce and you talk about some good wings well i'm gonna tell ya now yummyummyumm!!!!

The best way is to just use an egg wash , then coat in flour and deep fry.

If you don't want wings that are messy like hooters and all the rest... let your wings marinate in your hot sauce mixture overnite and during the day, then cook them, they'll already be spicy hot and you won't have that messy sauce all over them.
