Not knowing what he likes....it could be light and healthy or a big heavy dinner with all the trimmings.Some men are "meat and potatoes" men while others are more health conscious.

You can make something in the middle healthy and filling. I think he would be impressed with a soup, salad, main dish and dessert. Here is my suggestion for a cold winter night.

If you want to make it easy for both of you..then start early in the week getting your groceries in and prepare some things ahead of time. They can be frozen and thawed when needed. Cook the night before is also a great help. This depends on what you decide to serve.

A nice colorful tossed salad is a nice beginning plus a bowl of soup. Depending on your tastes and his...how about a clear soup with a few Asian vegetables floating on top. I love Miso soup with scallions and mushrooms. This is a Japanese soup you normally get at a Japanese restaurant but can find the ingredients at the Asian markets.

The salad can be simple lettuce, tomatoes, shredded carrots cauliflower, cilantro leaves and use a special Ginger dressing you can get at most grocery stores.

Main course...Marinated beef steak that you broil or grill with some sauteed veggies cooked together like zucchini, onions, green and red bell peppers. Steamed rice.

Dessert can be anything you like that's chocolate.....pie, pudding, cake, ice cream, etc with a couple whole strawberries on the side.

and some hot coffee to end the dinner ...or whatever you like...hope this helps!

Get some mozzarella cheese and some white bread, cut off the crusts and then make a sandwich with the cheese and the bread. Dip the sandwich in egg. Then fry in 1/2 inch oil in a pan. cut into triangles.


chop up some green and black olives, throw in a little roasted red pepper (pimento), melt a stick of butter and throw in some lemon.

put sauce over the triangles.

roast garlic - wrap up garlic in aluminum foil and put in oven for 45 minutes at 375.

squeeze onto crackers, good bread

chop up fresh tomatos, get some basil, garlic, olive oil, salt, pepper and cook it up. At the end put in some large shrimp,

Throw this over penne or your favorite pasta.


cook a filet, at the end put blue cheese on top, serve with roasted portabello mushrooms and broccoli

Cajun Seafood Pasta

2 cups heavy whipping cream
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh thyme
2 teaspoons salt
2 teaspoons ground black pepper
1 1/2 teaspoons crushed red pepper flakes
1 teaspoon ground white pepper
1 cup chopped green onions
1 cup chopped parsley
1/2 pound shrimp, peeled and deveined
1/2 pound scallops
1/2 cup shredded Swiss cheese
1/2 cup grated Parmesan cheese
1 pound dry fettuccine pasta

Cook pasta in a large pot of boiling salted water until al dente.
Meanwhile, pour cream into large skillet. Cook over medium heat, stirring constantly, until just about boiling. Reduce heat, and add herbs, salt, peppers, onions, and parsley. Simmer 7 to 8 minutes, or until thickened.
Stir in seafood, cooking until shrimp is no longer transparent. Stir in cheeses, blending well.
Drain pasta. Serve sauce over noodles
