Over cooked will be stringy and dry usually. Undercooked may be rubbery and tough. Check with meat thermometer in future or a guide will be: temp about 175-180 on thermometer in thickest part, not touching bone

Bake 350 for 1 hr. (not crispy)..covered or not
400-425 for pan fried (crispy) about 45 minutes
boil for about 20 minutes.
deep fry wings 15 minutes, larger parts 25 minutes-30 minutes

Undercooked chicken will vary in flavor and mouthfeel, depending on how undercooked it is. If it is just slightly undercooked, you may not notice much. Actually - slightly undercooked chicken is very moist and tastes pretty good. If it was cooked even less - and you bite into a raw part (closer to the center or closer to the bone) it will have less flavor and it will be harder to chew than the cooked part. Raw chicken feels slimy in the mouth and is pretty hard to chew. It has little flavors since the proteins have not been changed by heat. You will definitely know that something is "wrong" when you bite into raw chicken. Perhaps first thing you will notice is that the temperature is wrong - it will be colder than the cooked parts. I think, thankfully, most people have an aversion to it. It is totally different that biting into raw fish as in Japanese Sashimi. I just have to mention that taste should never be used as an indicator food safety. Cooking the chicken to an consistent and internal temperature of at least 165 degrees, and holding it at more than 140 degrees when hot or less than 40 degree when cold is the only way to help ensure food safety.

tough & rubbery = overcooked.

undercooked tastes like raw chicken smells, adn it still a clearish-pink.

Most ppl overcook chicken. The best way to tell is w/ a digital food therm. that you can set for chicken. You won't overcook it after that.

Under-cooked chicken tends to stay cold and feel a little rubbery in taste. Over-cooked chicken is very tough and difficult to eat.

tough sounds overcooked to me. undercooked chicken is kindof spongey.
