Milk, and the reasoning behind it is because milk is a neutral, so therefore it neutralizes acids. So if your mouth is burning milk will make the reaction became neutral... Another example is how people drink a gallon of milk in an hour and will always throw up.... Thats because it neutralizes all the acids in your stomach causing a reaction to get rid of it.

To take the "burn" away, BREAD is the best. For any drink including milk, the spicy taste will just usually stay because the milk slides over it and it is still in your tongue and mouth. It does not wash it away. Bread will ABSPORB the spice.

Milk, a citrus drink, or an alcoholic beverage.

You want either a dilutant or a solvent. Milk is a dilutant, citrus and alcohol are solvents (to dissolve the oil, which is what makes the food hot).

Sugar water, or salt water. Either addition absorbs the spice and cools your tounge. Many would prefer sugar water because it tastes good and won't dehydrate you.
Milk has works for me, though not for some. However, some people are lactose intolerant, and it also ruins the taste of the spice.
Crackers with a bit of salt on them (like ritz) also help.
Never use a carbonated drink- this only worsens it.

Milk is the best. My Dad always mixed in some buttermilk & said it was the best. You can also drink some fresh pineapple juice to aid in the digestion.
