I don't want to deep-fry them; I want to use a little oil to make the spices stick, then bake them in wedges.

Regular and sweet potatoes.

Suggestions?

Toss them in olive oil. If you want, add in some dried herbs, salt and pepper (fresh herbs will burn if they're roasted with the potatoes). Alternately, use olive oil and also sprinkle some chili powder and a TOUCH of seasoning salt for a more southwestern fry.

If you're trying to keep it light, Extra Virgin Olive Oil is the best to use. It is very light, delicate, and very nice to bake with. It helps spices stick to your foods and is really light in taste. So if you're going for a kind of low-fat thing, EVOO is the best way to go. If not, regular Olive Oil is good too.

Sunflower oil is really good for baking or deep frying. Try it.

I usually use olive oil for most things, but for fries, definately peanut oil. Makes them nice and crispy!

I had the best fries from Applebee's last week! Cook in olive oil, then use rosemary and parmasen cheese, delish!
