Boiled or baked; anything not involving oil.
My personal favorite is chooped up in a slow cooker, with either some water or some soup to add moisture.

Great question, and let me add something to the question...which potatoes taste best when cooked in a healthy way???

My winner - hands down - is Red Potatoes, first either baked or boiled or steamed, then cut into eighths and browned on the stovetop using fat-free cooking spray.

Red potatoes have a marginally higher sugar content than do russet potatoes so they taste slightly sweeter.

Red potatoes also survive baking better (they don't collapse as much or turn mushy).

And so, you can serve Red Potatoes without butters or creams and heavy salting.

The best way to cook potatoes is to bake them. There's almost no fat in them that way (since potatoes are starch, thats a great thing for dieters) and they taste great!

Bake them. (then try not to add too much naughty stuff on top when they are done! A little chicken broth spooned in there goes a long way to add flavor and moisture.)

boil or bake using no butter or other "fatty" things. or you can cook them on the stovetop adding salted water and make potato soup. add a little celery salt.

I'd use fresh potatoes from your supermarket, make them yourself, steam them, once and again sprinkling juice or water on it.
