If you are talking about the dough in it's first rise cover with a damp cloth .or oil the dough or both. If you are talking about letting it rise in the baking pan oil the dough top and the exposed sides. always keep dough in a draft free warm place.bread dough needs about 84*
humidity to stay soft and plyable sit a shallow pan in the bottom of the oven and fill it half full of very hot water place the bread on top rack to rise. trouble with this is you have to take both the bread and water out of oven in order to pre heat the oven for baking

I have always heard of putting a damp towel on top of it and it wont get hard

The easiest way i have found is to spray the loaf with cooking spray (Pam...or someting like it) and you need not cover it while raising then. It will NOT dry out. Use generous spray on loaf.

Whenever it starts doing that just put flour on the counter and knead it some more. Normally it's normal but if your worried about it just knead it more.

Lightly oil it, damp rag....check food network for clues. They always have a ton!

if the air gets to it thats whats usually does it., you can flour the top of it and make sure its covered all around. try that.
