To make pretend buttermilk, add 1-3/4 tablespoons of cream of tartar to a cup of milk, or add a tablespoon of lemon juice or white vinegar to a cup of milk and let it stand for 5 to 10 minutes. In many baking recipes, you can also just use plain yogurt or sour cream instead of buttermilk.

Substitute undrained, plain yogurt or sour cream, whisked with a little milk to thin, in recipes that call for buttermilk.
Or combine a tablespoon of white vinegar or lemon juice with enough milk to make 1 cup. Set the latter mixture aside for five minutes before using.

For 1 cup buttermilk you can use either of these.
1 cup plain yogurt OR
1 cup milk minus 1 tablespoon plus
1 tablespoon lemon juice or vinegar
If you are just using flour as thickener you can substitute cornstarch.

Well regular milk should work all right. and if flour is not required I wouldn't worry about it. Besides buttermilk is another name for milk so use regular milk and get after it and send me a piece.

add 1 tbs vinegar to regular milk to make one cup. Allow it to curdle. You can adjust that to make your desired amount of buttermilk. Lemon juice works also.
