I am looking into organic protein bars, and I was wondering, is it better to get one with a bit more saturated fat and less sugar (e.g. 3g sat fat, 9g sugar) or vise versa (e.g. 2g sat fat, 11g sugar)???

Fat if you want it to stay with you, sugar if you need energy fast.

honestly, those differences are pretty negligible in your case. i think both are good at under 3g sat fat and 11g sugar. the only other things i'd look for in a bar are some fiber and high protein content.

Saturated fat is the worst kind of fat so I would go with choice B, but since the differences are minimal I'm not sure if one is better than the other, but that's just me.

Well, it depends on the source of the saturated fat. Look on the ingredient list. If it appears to be from a vegetable source, go with the higher fat, if it appears to be from dairy, go with the sugar. Fat is not bad for you at all, as long as it is from vegetables.

It depends on what you are trying to accomplish. If you are trying to loose weight, the total calories are the most important. If you have hyper-glycemia or hypo-glycemia, eliminating sugar is more important.
