Quiet Bars?

I have been looking for nice and quiet bars in cantral London. I don't like DJs loud music and crowded bars also I'm old enough to go clubbing, my partner as well. We love out dinings but never have good experience drikinig at bars. If the bars open till late night 1am or 3am, would be fantastic. Please intoroduce nice one for us. Thanks for looking and answers.
