Oven Fried Chicken

Boneless, skinless chicken breasts
1 stick margarine
1 sleeve saltine crackers - crushed

Preheat oven to 375. Melt margarine on 11x14 baking sheet in oven while preheating. When margarine is melted remove sheet from oven and coat each chicken breast in margarine, then in crushed saltines. Place back on baking sheet and bake for 40 minutes turning halfway through. This is so easy and tastes just like deep fried.

FRIED CHICKEN
1 (3 to 4 pound) chicken, cut up into 10 pieces
Kosher salt
3 cups all-purpose flour
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons sweet paprika
2 teaspoons cayenne
Freshly ground black pepper
2 cups buttermilk
2 tablespoons hot chili sauce, such as Srirachi Hot Chili Sauce
Peanut oil, for frying

Put the chicken pieces into a large bowl. Cover the chicken with water by 1-inch; add 1 tablespoon of salt for each quart of water used. Cover and refrigerate at least 2 hours or overnight. In a large shallow platter, mix the flour, garlic powder, onion powder, paprika, and cayenne until well blended; season generously with salt and pepper. In another platter combine the buttermilk and hot sauce; season with salt and pepper. Drain the chicken and pat it dry. Dredge the pieces, a few at a time, in the flour mixture, then dip them into the buttermilk; dredge them again in the seasoned flour. Set aside and let the chicken rest while you heat the oil. Put about 3 inches of oil into a large deep pot; it should not come up more than half way. Bring the oil up to 375 degrees F over medium high heat. Working in batches, carefully add the chicken pieces 3 or 4 at a time. Fry, turning the pieces once, until golden brown and cooked through, about 20 minutes. Remove from the oil and place on a rack to drain; repeat with the remaining pieces.

The Best Fried Chicken You Will Ever Have!

This is the best and juiciest chicken you will ever have, and the ONLY way I have made my fried chicken. Plan a day ahead, the chicken must marinate in the fridge for 24 hours! Measure the marinade ingredients accurately. You don't need a deep-fryer to make this fried chicken, I use a non-stick 9-quart pot to make this and it turns out perfect! Just wait until you try this chicken!

8 servings 1 day 1 day prep

MARINADE
1 quart water
2 tablespoons salt
2 teaspoons cayenne pepper
2 1/2 teaspoons garlic powder
1 teaspoon pepper
1 tablespoon soy sauce
2 teaspoons worcestershire sauce
DREDGING MIXTURE
3 cups all-purpose flour
1 tablespoon seasoning salt (can use regular salt)
1 teaspoon garlic powder
1/2 teaspoon cayenne
pepper (I use about 1 teaspoon)
10-12 chicken pieces (with skin and bones)
10-12 cups vegetable oil (might use less)
1 teaspoon salt

A day ahead: whisk together all marinade ingredients in a large bowl.
Add in the chicken pieces (make certain that the pieces are covered with marinade).
Place in the refrigerator for 24 hours (turning 3-4 times in the 24 hours).
When ready to cook: In a large bowl mix together flour, salt, garlic powder, cayenne and pepper.
Drain the chicken pieces and discard the marinade.
Dredge each piece of chicken in seasoned flour mixture and place single layer on a large baking sheet or a rack; let stand for 10 minutes (must sit for 10 minutes!).
Heat about 2 inches of oil with 1 teaspoon salt in a 8 or 9-quart non-stick pot or (use a deep-fryer) over medium-high heat until between 365-375 degrees.
Fry the chicken for 20-25 minutes, turning a couple of times with long tongs until golden brown.
Drain on a rack.
Delicious!

Cajun Oven-Fried Chicken:

Panko, fresh crunchy Japenese breadcumbs, can be found at Asian markets. They produce the crispest oven-fried chicken, so it's worth the effort. You can try curry powder in place of the Cajun seasoning.

1/3 cup low-fat buttermilk
1 tablespoon salt-free Cajun seasoning (such as Spice Hunter)
1/2 teaspoon salt
1 cup panko (Japanese breadcrumbs)
2 chicken breast halves (about 1 pound), skinned
2 chicken drumsticks (about1/2 pound), skinned
2 chicken thighs (about 1/2 pound), skinned
Cooking spray

Preheat oven to 400°.

Combine first 3 ingredients in a shallow dish. Place panko in a shallow dish. Dip chicken, one piece at a time, into buttermilk mixture; dredge in panko.

Place chicken on a baking sheet lined with parchment paper. Lightly coat chicken with cooking spray. Bake at 400° for 40 minutes or until done, turning after 20 minutes.

Yield: 4 servings (serving size: 1 breast half or 1 thigh and 1 drumstick)

Add some Lawry's seasoning salt to add some zing to your flavor. Not too much though.

Get some wing dings...wash your chicken meat throughly. Get a big bowl and premix some garlic powder, some Lawry's seasoning, and some Black pepper in the flour. Drop your chicken in the flour and coat the chicken. Drop off excess flour in the bowl. Heat grease in a skillet, fill skillet mid-way with grease. Get the grease hot. Drop wing dings in a skillet...cook until the pieces are browned. Cooks really quick and are so tasty and easy to cook. For a variation in taste wash the chicken and marinade it in vinegar for about 30 minutes and then drop in the flour mixture and cook. Use Lemon Black Pepper in place of pepper. Sorry I didn't give exact measurements I've been cooking chicken wing dings for a while that I don't need measurements.

i use boneless skinless breast tenders cut into strips. in a big bowl with a lid or in a plastic bag mix about 2 cups of flour and add about a tablespoon of each pepper, seasoned salt chicken seasoning, onion powder, garlic powder. in a bowl beat 2 eggs. take the chicken dredge in egg first a few pieces at a time and then into the flour mixture set on a plate. repeat and you need to preheat the oil and then when it is hot place the chicken into the pan. cook until golden brown, flip and cook till that side is golden brown. the cooking time will take about 4-6 minutes a side. i like this recipe i kinda eye ball it and have got it pretty good. i am sure you will enjoy it messy to make but yummy to eat.

I make oven fried chicken...
1c. oil
chicken parts
salt and pepper/flour to coat
Fry the chicken pieces for about 3 minutes each side...Drain...Put on cookie sheet and continue to bake them for about 30 minutes at 425 degrees...Holds in the moisture and tastes like fried that you have used tons of oil for.

soak chicken in butter milk and egg then press in flour fry in oil on medium heat with a lid the thicker the pan the better put lid on simmer
