I am having a get together at work for colleagues doing a training qualification. Cheese and wine thoughts seemed appropriate. But what items should I invite people to bring along. As a start just something straightforward. Thanks

Encourage some of the rarer cheeses. Cheddar, Cheshire, Lancashire, Brie, Stilton will probably appear in abundance, but what of Tilsit, Bavarian Smoked, Caerphilly, Gouda, Boursin (yum, lovely), Emmenthal. Gruyere. Cashel Blue, from Ireland - a Stilton-like cheese but of a medium-soft consistency - keep it cool and do not expose it to air until the last moment - it goes off rapido. Dunlap from Scotland - very like the Scots, quite hard on the surface but with a warm interior and an aftertaste that just begs a nip of Talisker. Port Salut, Blue Brie (from Bavaria - excellent).

If you really hate someone that you have to invite, as them to look for Venezuelan Beaver Cheese (this cheese does not exist, but is well known - it was used as a spoof in Monty Python).

Ban smoking from the area where the cheese will be served - cheese avidly gobbles tobacco smoke and rapidly becomes tainted. (I'm a smoker, but I'm also a chef, and I do know a bit about food, and how tobacco ruins it). Do, however, provide a smoking area for use after the nibbles, a pipe or a good cigar after a cheesefest is very pleasant for those who appreciate good cheese and good tobacco. Cigarettes - ptui!)

My sommelier (wine-chef) advises me that you should prevail upon your richer invitees to bring along some port (tawny), Armagnac or Cognac, Cavados and Drambuie. These should be made available after most of the cheese and wine has been consumes, otherwise the 'pissheads' in your assemblage will simply eschew the wine and get blotto, pronto, on the strong drink. I agree. Armagnac, and a good Honduran, Dominican or Cuban cigar are excellent apres the cheese, but you will get disaster if spirits are available during the menage.

I think I would want to theme the evening a little just to make it a bit special. Go for cheeses and wines of a particular country or region as the two often go together naturally. If you go for France then you will have plenty of choice. Make a list of the various cheeses and wines from that country and then ask each person to bring a bottle of wine and a portion of cheese from the list.

You will want also perhaps to serve the cheese either on bread, crackers or local equivalents. You may want to provide other nibbles if they are feeling a little peckish. Hope your evening is successful.

As a start a bottle of wine each, so then everyone gets to try different wines,, sound silly but do the same with the cheese , tell people to bring a sample of cheese , so everyone get a chance to try out different cheeses, also grapes , cheese biscuits, and beer for the ones that do not like wine, there will be some..........

I love the idea of a Cheese and wine evening, how lovely. When we do this sort of thing at my work we have a little list and get people to tick off what they are going to bring.

Cheese selection (of course)

Wine (of course)

Organic grapes red and white

Lovely breads

Celery sticks in water like flowers

Biscuits for cheese

Cheese straws

Cherry Tomatoes

AND A MASSIVE JAR OF PICKLED ONIONS lol (carried away)

Very small hot chillies

Assorted fruit Juice and some fizzy water for the ones who don't like wine.

You can have everyone bring a favorite bottle of wine. You could also give a list of wines you're going to serve and ask everyone to pick a type of cheese to bring to pair with each wine. Suggest everyone bring little dessert type snacks or something to go along with the wine?

My mom just had a wine tasting party and she asked everyone to bring a bottle of wine in a certain price range. She provided the cheese, but maybe have everyone bring their favorite crackers to go with the cheeses.

Are you providing all of the refreshments?
or is it a collective thing?

You could ask your guests to bring assorted crackers and different breads cut into small slices (rye, pumpernickle, 7 grain) or mini bagles. Fresh fruit (grapes, whole strawberries, apple slices, pear slices) go well with cheeses.

Perhaps you could provide a non-alcoholic beverage for non drinker. Sparkling flavored waters or white grape juice is good.

As an appertif you could provide a good quality chocolate to have with Ice Wines (dessert wines).

Different cheeses and wines and some fruits like apples pears and grapes. Have some disposable glasses that you can have your guests write numers on them so they can taste and comere. Have some pads of papers if they care to make noted for talking and comparing.

APart from wine and cheese. You could suggest biscuits for cheese, grapes go well with cheese as do silver skin onions.

If its on work time and property I wouldn't be bringing any sort of spirits. I'd for beverages I'd keep it to soda and water maybe some coffee, training is boring you need something to keep you awake! And for food I'd do take out, whatever the majority wants. Its quick and easy and no liability on your part for providing alcohol.
