My recipe calls for 2 sprigs, but I only have dried...

I would go with about half a teaspoon. Dried herbs are always stronger, you can always add more if its not enough

A sprig is just a small piece of the plant,usually used to decorate a dish,if you only have dried just sprinkle between 1/2 and 1 teaspoon of it to decorate.

I'm not sure but if you use dried insted of fresh it is 1/3 the amount. So I'd guess 2 sprigs is about 2 tsp.
