I've tried keeping it in an airtight container and even bought one of those little terracotta disks and nothing seems to work. Any ideas?

I'd vacuum seal it. There isn't a lot you can do about it, though, once it begins to lose its moisture it starts getting hard. It needs to be sealed tight. Here's a remedy for after it's gotten hard though.

If brown sugar hardens, let it stand overnight in a sealed jar with a damp paper towel or apple slice. For a quick fix, heat the needed amount in a 250º F oven for a few minutes or in a microwave oven on low for 1-2 minutes per cup. The softened brown sugar should be used immediately

Did you soak the terracotta disk in water first? You have to soak it in water for a while. Then you let dry it off and put it in the container with the brown sugar. Make sure it's an airtight container.

Brown sugar hardens when its moisture evaporates. Storing brown sugar in a way that allows the product to retain its natural moisture—in its original plastic bag (closed tightly) or in an airtight container—helps brown sugar stay moist.

The reason it becomes a brick is because its moisture is gone. Once its gone then it will dry up and get hard. So if you tried the container and disks then you just need to keep buying brown sugar.

Put it in a plastic container with a tight lid and put a piece of bread on top. Check the bread every month and replace as needed.

You can actually buy a stone that you put in your brown sugar to keep it moist. They are readily available at places like Bed, Bath, and Beyond. Or you can simply put in an orange peel! Works just as well!

that type of sugar is natural, thats means it does not have any preservatives that prevent to become hard.
what i suggest is that you take out of the container the amount of sugar that you need and put it on a plate, then gently hit with the bottom of a glass.

Mix in some rice, which will help to absorb moisture.
