Take out any bones and cut up the chicken into bite sized pieces.
Add some cream of celery soup, some chicken stock (if there isn't enough in the can) and/or a little milk or cream, cut up broccoli, cheddar cheese, a little Italian flavored bread crumbs, a little grated parmesan cheese, black pepper, a little salt.
Then put some cheddar, parm, and crumbs on top, dot with butter or margarine, and put it in the oven to set it and brown it.
YUMMY!
It's even better the next day and freezes well.
ADDED: I often layer cooked rice in the casserole. It's a whole meal.

Chicken and noodles! Cook egg noodles in chicken broth, along with some diced onion, celery, and carrots.
When the noodles are done, add the chicken cut into small dice. Season to taste with onion and garlic powder and some poultry seasoning. Serve with a salad and some corn bread or bread sticks.
Perfect comfort food for a cold, dreary winter day!
