For sure you need to take the Stansted Express from the airport to Liverpool Street station. It takes one hour, although they promise it is 45 minutes. You just buy a ticket right there at the airport. It is 15.50 gbp.

At Liverpool Street station, there is a tube station attached. You have options with the tube for getting a travelcard or just paying single ticket at a time, which is the expensive way. If you're on vacation and will travel around by tube, you should get the travelcard.

Check this site for a tube map and for your ticket options:

You'll see on the tube map that the probable fastest route from Liverpool station to Earl's Court Station (good choice for hotel in that area) is by taking the Central Line to Holborn and changing to the Picadilly Line, but you have many options.

there is no tube from Stansted, you can get a cab to Epping which will cost you around £30 which is on the central line tube but you will still have to change.

or get the train from Stansted to Liverpool street and change onto the tube.
