Spice Cookies
4 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon each ground nutmeg and salt
1/4 teaspoon each ground allspice and cloves
1 1/2 cups butter or margarine, at room temperature
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
In a large bowl mix flour, cinnamon, ginger, nutmeg, salt, allspice and cloves until blended. In another large bowl beat butter and sugar with electric mixer until light and fluffy. Beat in egg and vanilla. Reduce mixer speed to low and gradually add flour mixture, beating until well blended. Divide dough in thirds. Shape each into a ball and flatten to a 1-inch-thick round. Wrap in plastic wrap and refrigerate 1 hour or until firm enough to roll. Heat oven to 375 degrees F. Have cookie sheets ready. On a lightly floured surface roll one third of the dough at a time (keep remainder refrigerated) to 1/4-inch thickness. Cut dough in desired shapes with floured 3-inch cookie cutters. Place 1 inch apart on ungreased cookie sheets. (Chill and reroll scraps.) Bake about 12 minutes or until cookies are golden on undersides and edges are just starting to brown. Cool completely on sheet on wire rack. Ice or decorate as desired.

Traditionally Snickerdoodles are just coated with a cinnamon and sugar mix before baking. I take mine a step farther by adding 1 generous teaspoon of cinnamon to the dough. Very tasty!
I've been tempted to try adding cinnamon to peanut butter cookies, or maybe even chocolate chip cookies. Not too sure how the cinnamon and chocolate would go together though. Perhaps just make the dough, adding cinnamon, and skipping the chips. Hmmm?

Easy enough?
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 1/2 tablespoons molasses
2 1/4 cups all-purpose flour
1 1/8 teaspoons baking soda
1 tablespoon ground cinnamon
Preheat oven to 350 degrees F (180 degrees C).
Cream together butter and sugar.
Mix in egg and molasses, blending well.
Mix flour, baking soda and cinnamon; add to creamed mixture, mixing well.
Drop by teaspoonfuls onto ungreased cookie sheet.
Bake for 10 to 12 minutes.

Pearl (coarse) sugar or regular sugar
4 oz semisweet chocolate pieces, melted
In a very large mixing bowl, stir together the flour, 2 cups sugar, cinnamon, baking ammonia and salt. Cut in butter till mixture resembles coarse cornmeal. Add eggs and lemon peel; mix well to form a dough. On a floured surface, roll out dough to 1/8-inch thickness. Cut into shapes with 2- or 3-inch cookie cutters. Place cutouts on ungreased cookie sheets. Combine egg white and water; brush over tops of cookies. Sprinkle cookies with sugar. Bake in a 375° oven for 8 to 10 minutes or till golden. Remove to wire rack to cool. Drizzle with melted chocolate.

PREPARATION:
Cream butter and sugar until light and fluffy. Beat in egg and vanilla. Sift flour with baking powder and 1 teaspoon cinnamon; add to butter mixture and blend well. Chill dough for 30 minutes. In a wide shallow bowl, combine chopped nuts with 2 tablespoons cinnamon and 2 tablespoons sugar.
Form chilled cinnamon cookie dough into small balls; roll each ball in the cinnamon sugar nut mixture then place on greased and floured cookie sheets (or use silpat sheets) about 2 to 3 inches apart. Bake at 350° for about 10 to 12 minutes. Makes about 36 cinnamon cookies.
