You sure can. For each cup of brown sugar just substitute one cup of granulated sugar plus 2 tbsp molasses or dark corn syrup.
If you don't have either molasses or corn syrup your cookies will still turn out fine with the white sugar.

Impossible Peanut Butter Cookies
These are the quickest, simplest cookies that you will ever make and taste great!
18 cookies in 12 min .
1 cup peanut butter (your choice, smooth or chunky)
1 cup granulated sugar
1 large egg
sugar, for rolling (optional)
Mix together until smooth.
Drop by teaspoon onto cookie sheet two inches apart. If desired, roll in extra sugar before placing on cookie sheet.
Press with fork and press again in opposite direction.
Bake 10-12 minutes at 350°.
Do not brown, do not over bake.

I make mine with 1 cup sugar 1cup peanut butter 1 egg mix well and bake at 350 for 2 to 13 minutes or until light golden brown. Let set an cool for a few minutes before you remove them from cookie sheet to set up
