what are some creative ways to use xanthan gum?

anything from breads, desserts, jellies, foams. etc. I find this product intriquing!

i saw on martha stewart, a woman made gluten free brownies with it. they looked yummy I'm sure the recipes are on her site and the guest did have a cookbook also
