i mean ingredients as well!

8ozs plain or self raising flour.
pinch of salt.
2 large eggs
1 egg white.
approximately 1/2 pint of cold milk
approximately 1/4 pint cold water.

Sieve flour and salt.
Make well in centre.
Add eggs and a little milk.
Whisk well gradually drawing in flour to mix
Continue adding milk and water....a little at a time!
Batter should be thin but not too thin!
If mix is in anyway lumpy...pass through a sieve.
Leave batter to relax for 30 minutes at least before cooking!
Remember you can always add to in cooking but you can never take away!
Heat oil or beef fat till it's smoking and pour in batter and cook in hot oven...190c for approximately 15 mins depending on if you are cooking as a cake or individual puddings...if cake then allow 25 mins.
By adding the egg white...this will give more rise to the yorkies

I love Yorkshire pudding. Done properly, it's more French than British. One good thing to say about the French is that they can cook.

Allow the Mixture to stand over-night,Hot oil in tins,then pour in Mixture(Hot Oven Essential)

Use dripping to grease the tins! Adds great depth of flavor that compliments the meal.
