First of all, please don't be like the former vice-pres Quail who spelled potato incorrectly in front of an elementary school audience! You only add the 'e' when you are making it a plural (and then, of course, you would add an 's')! Now, for the recipe idea -- par-boil some nice red (new) potatoes, anywhere from 3 to 5 minutes... don't peel them ... cut them into wedges similar to the items you're putting on the scewers and include them in the "mixture" (eg: beef, cherry/plum tomato, onion, green pepper, mushroom, potato; beef, cherry/ ,etc...) of course you can pierce them in any order you desire. But as for a "side dish", there is no side dish for kabobs -- they're an "all-in-one" meal!!!!!!!! However, you could do "twice baked" potatoes for a side ... mmmmmmm... be sure & grease the skins first, sprinkle w/salt, wrap in foil and ACTUALLY BAKE THEM IN THE OVEN! (375 for 45 minutes +)!

How about some ranch flavored potato wedges. Cut each potato into even size wedges. Place in zip-lock bag, add olive oil (2-4tbs, depending on amount of potato wedges) or veg oil. Add a packet of powdered ranch dressing and shake. Spread out onto a baking sheet and bake at approx 350 degrees until wedges are cooked thu and golden.

Now, with kabobs I think a baked potato sounds good.

Melt 1 to 2 sticks of butter in baking pan(Depends on how many potatoes you're wanting to use). Peel potatoes and cut into size you want. Peel and chop onions (1-2). Add to melted butter and toss. Bake at 375 covered for about 30-45 min.

hmm...potatoes with kabobs. I'm sure it would be great but it just doesn't sound groovy to me. How bout some seasoned cous-cous or chili lime corn on the cob? If you are able to get frozen corn on the cob this time of year you could do it. Cook up your corn. When it is finished butter it up and sprinkle lightly with chili powder and salt. Give all the cobs a squeeze of lime. This just reminds me of summers and BBQ's and I think it would go great with kabobs.

Personally, I like potato packets. You slice potatoes in thin rounds and place in a foil packet with whatever seasonings you like, (I like Emeril's Bayou Blast). Make sure you put some oil on them though, or they will stick to the foil. Seal tightly and grill or bake in the oven until the potatoes are tender.

Garlic mashed potatoes are yummy with anything. I like them with the skins mashed in as well. Yum.

Baked POTATO ( no "e") salad. would go great with anything. You use baking potatoes and you add sour cream, chives, salt, and mayo to loosen it up.
