i went to the market to buy basil to make pesto, but i ended up grabbing the arugula instead. now i don't know what to do with it. it's basically just sitting there in the fridge..
does anyone have any recipes that they enjoy and love to share them? thanks!

I had the simplest dish (and so unforgettable) in an Italian restaurant that I have managed to re-create at home quite easily. The sharp taste of the arugula and parmesan flakes holds against the juiciness of a simple steak.

The arugula is lightly dressed in simple olive oil and vinegar dressing, seasoned with salt and pepper. It is topped with slices of perfectly grilled, perfectly tender beef fillet that is seasoned so simply with olive oil, salt and pepper such that the flavour of the meat stands out. Everything is topped with parmesan flakes. I guess quality of meat and oil would spell the difference. I hope you try and enjoy this - perfect for sharing too.

Arugula is a wonderful substitute to basil for pesto. You should try it. Also...if you were afraid to make a pesto out of it, how bout making your own jazzed up condiment? Take a healthy handful of arugula, and a clove of garlic and whiz it up in your food processor. In another bowl have about a half a jar of mayo waiting. Combine the both and it makes a very nice spread for ANY meat and cheese or veggie sandwich.

Put it in boiling water for a minute or two, drain and run cold water over it (parboil). Put about 2 teaspoons olive oil in skillet, add minced garlic and arugula and saute until tender. It doesn't take long. Season with salt and pepper. You can eat it like that or toss it with cooked pasta. Sprinkle with parmesan.

use it in a salad, or make pasta with an olive oil sauce (like pasta primavera) and toss it in at the end.
