we say "itadakimasu" to let the others know that youre ready to take the meal..and "gochi so sama deshita"to let them know that you finished and thank them for the meal..

Darn it, if that is all they say, then I like them !!!!!!!! There had been meals where the saying of grace before meals alone took all of 10 minutes when everybody including anybody new or visiting are supposed to tell speeches and thanking God for the food, the blessing of the company of each and every single person in the room, uhmmm , and you are complaining about one word?
LOL.
Stop that and pass the potatoes.

Itadakimasu literally means 'I will take', but in that context just means 'Thanks for the food I'm about to eat'. My wife says it even if she did the cooking. I guess it's thanking god, mother nature, whatever. She only says gochisosama after a meal if somebody else prepared it.

it's equivalent to something like " excuse me, but i'm going to eat now ..." mannerisms.

even traditional chinese people say it in there families. " everyone please start dinner. " mannerisms.

i'm sure even koreans have this ritual.

nowadays it's more like :
" munch...munch..munch...munch....gulp. "
