This is my version of a greek dish called pastitsio which is easy to make, but makes a nice change.
Cook some macaroni and in the meantime make essentially a bolognaise out of the mince, but use a tin of tomatoes and some tomatoe puree to make it quite tomatoey and oregano as the herb.
Put the pasta in the bottom of a caserole dish so that it forms a thick layer and put the mince on top. Then make a very thick cheese sauce to put on top of the mince. It needs to be thick so that it sits on top rather than pours in amongst the mince and macaroni. Then bake in a medium oven for about half an hour.
Trust me it's delicious!

Hi, Dough balls are made from beef suet, flour (self raising preferably to make them light and fluffy), water and salt and pepper to season them. I'm a chef so I know what I'm talking about! Just dump the stuff in a bowl (in sensible amounts of course!) and mix to a stiff-ish consistency then simply pop them into the mince as it's cooking and voila! Mince & dough balls! Don't just use flour and water, it will just make a paste, you need a mixture you can roll into balls. We eat this a lot, not just cos we're Scottish, just because it tastes amazing! Alternatively you can buy dough ball/dumpling mix in a packet, all you have to do is add water and it's just as good as making them from scratch. Happy cooking! Dawn xxx

450g (1lb) lean minced beef or lamb
500g jar of tomato pasta cooking sauce with vegetables
4 large pitta breads
50g (2oz) Cheddar cheese
In a large non-stick frying pan or saucepan, dry fry the lean minced beef or lamb until browned, approximately 4-6 minutes.
Add the jar shop bought tomato pasta cooking sauce with vegetables, bring to the boil and simmer for 6-8 minutes. Divide the mince between 4 large pitta breads and sprinkle with the grated Cheddar cheese.
Serve with a tomato and spring onion salad.

Fry mince with onions and green peppers. Once some moisture in the bottom of the pan, simmer slowly until vegetables are soft. Stir in a couple of cans of Campbells condensed mushroom soup and some cooked macaroni or pasta of your choice. Delicious and only one pan to wash up!

Joe's Special
Some say this famous San Francisco specialty was devised by a San Francisco chef as a variation on the Italian frittata. Others insist it was created as an after-hours snack by dance-band musicians of the 1920's.
A third theory attributes the dish to miners who frequented the city's riotous Barbary Coast district in the 1850's.
Whatever its origin may be, this hearty mixture of beef, onions, spinach and eggs makes a satisfying meal any time, day or night.
INGREDIENTS:
2 tablespoons olive oil
2 pounds lean ground beef
2 medium onions, finely chopped
2 garlic cloves, finely minced
1/2 pound mushrooms, sliced, (optional)
1 1/4 teaspoons salt
1/4 teaspoon ground nutmeg, fresh ok
1/4 teaspoon dry oregano, fresh ok
1/4 teaspoon pepper
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry; or 1/2 pound fresh spinach, rinsed, stems removed,
and leaves chopped (about 4 cups)
4 to 6 large eggs, lightly beaten
PREPARATION:
1.Heat oil in a wide frying pan over high heat. Crumble in beef and cook, stirring often, until browned. Drain excess fat.
2.Add onions, garlic and mushrooms; reduce heat to medium and cook, stirring occasionally, until onions are softened, about 5 minutes.
3.Stir in salt, nutmeg, pepper, oregano and spinach; cook for about 5 more minutes. Add beaten eggs. Reduce heat to low and cook, stirring constantly, just until eggs are softly set. Serve with plenty of grated Parmesan cheese and perhaps hard crust Italian sour dough bread.
What to drink with Joe's Special? I'd open a good beer, probably an India Pale Ale.

sloppy Joes
1 pound ground meat
1 small onion,minced fine
1 clove garlic minced fine
1 cup ketchup
2 Tablespoon brown sugar
2 Tablespoon lemon juice
2 Tablespoon worchestireshire sauce
1 Tablespoon vinegar
2 teaspoons prepared yellow mustard
1/4 cup water
salt and pepper to taste
1/4 cup water
fry up the meat with the onion and garlic till all meat is brown and no longer pink. drain off fat, add all remaining ingredients, stir well, let simmer 15 minutes and serve on large submarine or hamburger buns.. makes 4 large servings. 6 small servings..

Try this minced beef stir fry. It's awesome!!! Alternatively, you could make the same recipe using minced pork or chicken instead. It goes well with steamed rice.
INGREDIENTS
1 teaspoon sesame seeds
1 tablespoon soy sauce
1 tablespoon cornstarch
2 cloves garlic, minced
1 pound minced beef
3/4 cup water
2 tablespoons soy sauce
2 1/2 teaspoons cornstarch
1/2 teaspoon white sugar
1 teaspoon red pepper flakes
2 tablespoons vegetable oil, divided
2 carrots, thinly sliced
1 bunch green onions, cut into 2 inch pieces
DIRECTIONS
In a dry skillet over medium heat, toast sesame seeds for 1 to2 minutes, or until the seeds begin to turn golden brown; set aside.
In a medium bowl, mix together 1 tablespoon soy sauce, 1 tablespoon cornstarch, and minced garlic. Stir in beef mince. Let stand for at least 10 minutes.
In a separate small bowl, mix together water, 2 tablespoons soy sauce, 2 1/2 teaspoons cornstarch, sugar, sesame seeds, and red pepper flakes; set aside.
Heat 1 tablespoon of oil in a wok or skillet over high heat. Cook and stir beef in hot oil for 1 minute; remove, and set aside. Heat remaining tablespoon of oil in the same pan. Saute carrots and white part of green onions for 2 minutes. Stir in green parts of the green onion, and saute for 1 minute. Stir in sesame seed mixture and beef. Cook and stir until sauce boils and thickens.

fry onions with garlic then add half a tin off chopped tin tomatoes, add a bit of chilli, salt, garam masala, and turmeric to flavour then allow to slow cook on a low heat for bout 1 hr
then enjoy with a naan or 2

Deb's Homemade Pasties.
500 g (1 lb) mince steak (better if it is not lean)
1 cup frozen peas
Diced large peeled potatoe
Diced peeled pumpkin (1 cup)
Diced carrots (2)
1 large brown onion diced
1/4 cup tomatoe sauce(ketchup)
1 TB chicken stock powder
garlic (optional)
Honey (1/4 cup)
6 frozen puff pastry sheets (approx)
Egg & Milk for basting.
sesame seeds (opt)
Heat oven 210 C. In large bowl mix all ingredients till combined. Put about 1 1/2 cups meat mixture on pastry sheet, baste edges with water, fold over and press eges with fork. Repeat with rest of pastry sheets. Place on trays with baking paper (Glad Bake). Baste with egg & milk mixture, sprinkle sesame seeds over top if desired and bake about 40 min till pastry golden, mmm yumbo jumbo!

Korean Bulgogi
1 pound ground beef
Salt
Freshly ground black pepper
1 cup sesame oil
2 cups soy sauce
1 tablespoon chopped garlic
1 tablespoon chopped fresh ginger
Crushed red pepper, to taste
2 cups cooked white long grain rice or spaghetti noodles
1 tablespoon snipped chives
Season the beef with salt and pepper. In a mixing bowl, combine the oil, soy sauce, garlic and ginger. Season with crushed red pepper to taste. Cook and drain ground beef. Reduce the marinade to one third over medium heat. Mix in with cooked beef and toss with noodles or serve with rice. Garnish with chives.
