Are you aware that anthropomorphise is a five syllable word? I hate five syllable words. They're too hard. And it takes too much ink to write them down and stuff. And forget about pronouncing them. And I'm reasonably sure that God hates them too -- after all, how many five syllable words are there in the bible?
I'm going to let you off with a warning this time but in the future please remember that if you can't say it with four (or less) syllable words it's not worth saying.

To understand him/her/whatever. GOD would be very scary if no attempt was made to find any common ground with GOD.
Why are all the aliens in books and TV,etc. look similar to us in bipedal form? So we can grasp the concept, instead of freaking out, as we will.
All babies look like babies so we care for them. (Well that's off target.)
Hmm, oh, to reflect the power of the human ruler that controlled their daily life. GOD took on similar aspects as the best rulers, (no the worse, interesting). Rulers had life or death hanging over every person under their "care". Remember. Community rules.

That's why I'm interested in Buddhism, instead of extolling an anthropomorphic creator God, Gautama Buddha taught that there was no creator god and believed the more important issue was to bring beings out of suffering to liberation.

Basically there are two reasons.
1. It makes it easier to try and wrap your physical mind around the idea.
2.It is a Christian viewpoint of the Creator being male. AS they have been a monotheistic , Patrical Religion since Moses started it.

It is a way of limiting God. And shows a basic misunderstanding of Who and What God is. Just because we are a certain way, does not limit God. They misunderstand when God says "Let us make man in our own image." That image is not physical image, but the image of the soul possessing freewill, emotion etc. Great question.

DUDE! I'M SOOOO JEALOUS! I can hardly ever get "anthropomorphise" in a conversation.
That being said: It's a whole lot easier to relate to something if it has human attributes.

Simple.
To try to comprehend who he is. God revealed himself with antropormorphic descriptors. He wants us to understand him, even if it is a very basic understanding.

We didn't have to. God did it for us, when he sent his son to us, as a man.
