Yes, it's because they contain vitamins, minerals that our bodies need, plus, the fiber ie from celery, carrots, etc. help aid our digestive system-as my dad used to tell me to eat my salad-everybody needs roughedge. It is a healthy way to care for our bodies. Take care.
