Chicken parmesan is always a favorite with most people. Roll boneless, skinless chicken breasts in flour, then egg and finally italian breadcrumbs (I usually just use egg and breadcrumbs). Season more if you want.
Fry a minute or two on each side in olive oil or butter, medium high heat, until the outside has browned well but hasn't burned.
Pour some tomato sauce or pasta sauce on the bottom of a baking dish that will fit all of your chix breasts. Layer the breasts on top of the sauce (not too much, only use about a cup, just enough to cover the bottom). Add more tomato sauce on top and bake at 350 for about 25-35 minutes (it depends on how long you browned the chicken for.)
About ten minutes before the chicken is done, cover the breasts with mozzarella cheese (pepper jack is good) and add some parmesan also if you have it.
I usually end up baking my chicken for about forty minutes (some people prefer to do it all on the stovetop or cook it almost completely on the stovetop and then bake it just a little while to melt the cheese). I like my chicken well done.
But this is just a variation...check the web for different recipes if you would like something more specific. The messy part is the prep of the chicken, after that you can let it bake. Serve with a salad or antipasto, spaghetti, and maybe garlic bread. Also, chicken marsala is really good if you want a wine and mushroom recipe. Allrecipes and about.com have plenty of ideas.

My husband experimented and came up with this and it is the best!! We use a seasoning that we get from italy but I'm sure that any italian seasoning would work great.
heat olive oil in a skillit season chicken breast w/ italian seasoning saute basically browning it, your not cooking it all the way through. then in a casserole dish put a can of italian stewed and a can of italian diced tomatos how much depends on how many ppl your serving. bake at 350 until chicken is done. We sprinkle Italian style cheese on top before serving and have some on the table incase ppl want extra. Serve over lingunie.

This seasoning method comes from Puerto Rico but because of the garlic it has a very Italian flare & it's...
MY FAVORITE!!!!
Take 6(change the amounts depending on how much chicken you have... this would work for one pound) cloves of garlic & mash them (you can use a food processor or a mortar & pestle)
add salt, oregano, & a little bit of olive oil..make into a paste
If you have all purpose seasoning sprinkle some all over the chicken then rub the paste all over the chicken breasts (you may want to cut some slits in the chicken to get seasoning inside)
Put in a pan with a little bit of butter to saute (you can also add half a cup of white wine & a tablesppon of lemon juice, this part is optional... I just love how juicey & tasty it comes out)
Serve on top of plain pasta or on the side of rice pilaf

Italian Chicken
Ingredients:
14 ounces Spaghetti Sauce
1 teaspoon Italian seasoning
4 Chicken breasts
1/4 teaspoon Cayenne pepper
1/4 pound Mushrooms sliced
1 tablespoon Parmesan cheese
1 Green pepper diced
1 package Pasta
Pour spaghetti sauce into a large frying pan. Place chicken breasts in pan. Cover and bring to a gentle boil. Add mushrooms, green pepper, italian seasoning, and cayenne pepper. Cover and simmer until chicken is springy to touch. Cut Chicken into bite size pieces once cooked (the chicken should fall apart a little bit). Serve over pasta or rice with grated parmesan cheese.

Here is how to make italian chicken meatballs:
Ingredients: 4 tbsp oil
2 onions - finely chopped
2 tsp garlic paste
2 tbsp thick tomato puree
1/2 kg minced chicken
75 gm fresh breadcrumbs
2 tbsp chopped coriander
1/2 tsp chilli powder
3 tbsp hung yoghurt
salt and pepper
1 tbsp lemon juice
2 tbsp butter/ oil
Sauce
1 tbsp flour
175 ml chicken stock
150 ml yoghurt
chopped coriander to garnish
Method: Fry the onion, garlic paste and tomato puree together.
Grind the mixture with the remaining meatball ingredients together. Shape into balls and coat with flour.
Fry in hot oil until brown. Remove from the pan. Fry the flour in the pan.
Add chicken stock. Stir in the yoghurt.
Place the meatballs in the gravy and allow it to heat through. Garnish with coriander. Serve with pasta.

Here is recipe for Chicken Marsala
6 chicken breasts
Salt
Pepper
Thyme
Flour, for dredging
Canola oil
10 ounces sliced mushrooms
1/2 cup marsala wine
2 cups chicken stock
1 tablespoon butter
1 tablespoon flour
Season chicken with salt, pepper and thyme. Dip chicken breasts in flour. Heat skillet. Add oil to skillet and sauté chicken breasts until brown on both sides. Remove browned chicken breasts from skillet. Add more oil if necessary. Add mushrooms to skillet and sauté on high heat until browned. Mushroom liquid will start to deglaze the pan. Add Marsala to skillet and reduce by half, about 5 minutes. Add chicken stock to skillet and put chicken back to the pan. Simmer until chicken is cooked through, about 5 to 10 minutes. Transfer chicken to platter. Thicken sauce by making a buerre manie with butter and flour, and whisking it in until sauce thickens.

1/4 cup Balsamic Vinegar
2 Large Chicken Breast
1tbsp Extra Virgin Olive Oil
1 tsp of butter
parsley
marinara sauce
pinch of salt
mozzerella cheese
Directions: put olive oil in pan, heat; add butter Put Chicken breast in pan add parsley and let cook 10 minutes on each side. Add balsamic vinegar and let chicken simmer another 5-10 minutes; add marinara sauce and stir then top with mozzeralla sauce. This is truly the best chicken you will eat.
