it has a shortbread or sugar cookie like base that you pre-bake, then you make a egg & brown sugar mixture (similar to what you would do for a pecan pie filling) but i think you even beat the whites and fold them in. but it has coconut and i believe nuts in the filling. my great-aunt called them cookies what am.... weird name i know but they were the best things on earth and i am pregnate with child number 3 and i have to find them!!!!! have to.... if anyone can help please save me from my depression... i need those cookie bars

None of these recipes EXACTLY match your description, but they all sound good, and I tried to find matches to most of your ingredients. The first one doesn't have a meringue topping, but has everything else. The 2nd one has a meringe topping, but is more like a cake. You could stir in some nuts, also. The 3rd one is more like a classic pecan pie, no coconut. I think they all sound yummy, though, and maybe one of them will lift your spirits a bit.

DREAM BARS

INGREDIENTS:
Crust:
1/2 cup butter
1/2 cup brown sugar, packed
1 cup flour

Filling:
2 eggs
1 cup brown sugar, packed
1 teaspoon vanilla
2 tablespoons flour
1/2 teaspoon baking powder
1 1/2 cups coconut
1 cup chopped pecans or walnuts

PREPARATION:
Combine crust ingredients; press into a 13x9x2-inch baking pan. Bake for 10 minutes at 350°.
Meanwhile, make filling. Mix together the eggs, 1 cup brown sugar, vanilla, 2 tablespoons flour, and baking powder. Stir in coconut and nuts. Spread onto the crust and bake for 20 minutes longer.


COCONUT BARS ANA

Makes 12 servings.

For the Cake layer
1/2 cup butter, at room temperature
1 cup sugar
1 egg
1 egg yolk
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons milk (i used soy)
1/2 teaspoon vanilla extract
1/4 teaspoon coconut extract

For the Coconut Meringue
1 egg white — beaten until foamy
1 cup firmly packed brown sugar
2/3 cup flaked coconut
1/2 teaspoon vanilla extract
1/4 teaspoon coconut extract

Preheat oven to 350º.

In a bowl and using an electric mixer, cream together butter, sugar, and whole egg and egg yolk. In another bowl or on a piece of waxed paper, mix together flour, baking powder, and salt. Add flour mixture,milk, and extracts to butter mixture and mix well. Spread batter in an oiled 8 inch square pan or baking dish. (Batter will be thick).

To make meringue: In a small bowl stir together egg white, brown sugar, coconut, and extracts. Spread mixture evenly over batter. Bake until golden on top and toothpick inserted in center comes out clean, 30-35 minutes (it took 5 min longer in my oven). Cool on wire rack, then cut into bars to serve.

LAYERED PECAN PIE BARS

INGREDIENTS:
3 cups all-purpose flour
3/4 cup brown sugar, firmly packed
1 1/2 cups butter, room temperature

Pecan Filling
3/4 cup brown sugar, firmly packed
1 1/2 cups light corn syrup
1 cup milk
1/3 cup melted butter
1 1/3 teaspoons vanilla
4 large eggs
1 1/2 cups chopped pecans

PREPARATION:
Heat oven to 400°.
Stir flour then measure 3 level cups. Combine flour in a large bowl with the 3/4 cup brown sugar, and 1 1/2 cups butter. Use a mixer or pastry blender to mix until crumbly. Reserve 2 cups of the crumb mixture for filling and topping.

Press remaining mixture into the bottom and about halfway up sides of a 15x10-inch jelly-roll pan. Bake for 10 minutes.
Meanwhile, in another bowl, combine 1/4 cup of the reserved crumb mixture with 3/4 cup brown sugar, corn syrup, milk, butter, vanilla, and eggs. Mix until well blended. Stir in the chopped pecans. Spread mixture over the warm crust; bake for 10 minutes longer.

Reduce oven to 350°. Sprinkle remaining 1 3/4 cup crumbs over filling; bake for about 20 to 25 minutes longer, until filling is set and topping is golden brown. Serve with a dollop of sweetened whipped cream or whipped topping or a scoop of ice cream. Makes about 18 to 24 bars, depending on size.

BUTTER TART BARS

1 c. butter
2/3 c. brown sugar
2 1/2 c. flour
4 eggs, beaten
2 c. brown sugar
1/2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 c. currants
1 c. chopped walnuts
I think you could substitute the coconut for the nuts
Bottom Layer: Crumble first 3 ingredients together in bowl. Press into ungreased 9 x 13 inch pan. Bake in 350 degree oven for 10 minutes.
Top Layer: Beat eggs and second amount of sugar until light and thick. Add the rest of the ingredients. Stir and spread over bottom layer. Bake in 350 degree oven for about 30 minutes or until center is almost firm

* 2 eggs, separated
* 1 tsp. vanilla
* 1-1/2 cups flour
* 1 tsp. baking soda
* 2 cups semisweet chocolate chips
* 1/2 cup brown sugar

PREPARATION:
Preheat oven to 325 degrees. Grease 13 x 9" baking pan and set aside. In large bowl, beat 1/2 cup brown sugar, sugar and butter until creamy. Beat in egg yolks and vanilla extract. Gradually stir in flour and baking soda until crumbly.

Beat egg whites in medium bowl until soft peaks form. Gradually beat in 1/2 cup brown sugar until stiff peaks form. (Actually, I've never been able to get the egg white mixture stiff; if you are beating and beating and stiff peaks won't form, don't worry about it. Just continue with the recipe; it will be fine.) Spread meringue over chocolate chips.

Bake at 325 degrees for 30 to 40 minutes or until top is set and lightly browned. Cool in pan on wire rack for 20 minutes. Cut into bars while still warm. 36 bars

1/2 cup chopped walnuts
1/2 cup coconut

Heat oven to 350 degrees F.

Cream butter and confectioners sugar until light and fluffy. Blend in flour. Press evenly in 13 x 9 x 2-inch pan. Bake for 12 to 15 minutes.

Combine remaining ingredients; spread over hot baked layer. Bake for 20 minutes longer.

Elegant little bars with a "melt in your mouth" topping.

1/2 cup butter or margarine, softened
1 cup granulated sugar
1 whole egg
1 egg yolk
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons milk
1/2 teaspoon vanilla extract

Coconut Meringue
1 egg white, beaten until foamy
1 cup firmly packed light brown sugar
2/3 cup flaked dried coconut
1/2 teaspoon vanilla extract

Preheat oven to 350 degrees F.

Paula Dean made something very very similar to this last weekend on her cooking show...it was graham crackers...it had the nuts, coconut, and I believe the egg white...anyway...check out her website....might be called graham cracker bars
