If we have a range of how much about the human body they know, which one of the above are they most closest to? How fundamentally do they know the body?

Many doctors can fall into all 3 categories.
Lots of doctors also have their PhD in different specialties and do research with that. They could use that degree to engineer an artificial heart, a new lab test, etc...
They do all that in addition to seeing and treating patients!

I think that doctors are more Technicians, however, that is but one of the many things doctors are.

they are thinker and strategist. they are the smartest people around, more than the president and more than the plumber and more than the nurses.
Certainly more than the lawyers...
