In a situation that is contrary to fact, for example, such as wanting to be somewhere on Monday, and you can't, you would use the subjunctive mood of the verb, or "were."
In most "wish" situations you are pretty safe using were.
I wish I were a millionaire.

"Was" is used with a singular noun. But the sentence "I wish I was going to be on monday" doesn't make sense, and the word Monday should be capitalized.

I am almost sure to have seen in a grammar that both ´I was´ and ´I were´ are acceptable in the subjunctive, with some kind of subtle difference in meaning. (along with the rather outmoded ´I be´).
However, none of your sentences make sense for semantic reasons.

It depends on the context of what you are saying. 'were is a conditional phrase...it means that it isn't really going to happen. I wish I were (but I am not) going to be on monday.
