So what's the diff, really? Why is american different from swiss, havarti, gouda, blue or camembert? I must assume all cheeses are based from some basic ingredients to be called cheese so how do we come by the differences?

The basic ingredients in cheese are milk and some form of acid. The acid is added to the milk to form a precipitate, the curd, but then different additives like salt and herbs can be added. The differences lie in what kind of milk is used, what kind of acid is used, and what they add to the cheese. Cheeses are also processed differently. Some are aged, some are not, and other variables can change the overall texture and taste. Hope this helps.
