I'm sure all pilots want to fly the newest technology, but they obviously can't. So how do they decide who flies fighters, or cargo, recon etc.?

They take an exam. Depending on how well you do on the simmulator, test, and actual flight is how its determined. Most of the time veterans fly the newest tech becuase they have more exp. It also can depend on where your employed, your status, what models are avalible, and your actual job.

The type of aircraft choice is determined by your class standing. The cool fighters usually go to the top people, then bombers, cargo etc.
