BAKED POTATO SOUP
Ingredients:
3 lb all-purpose potatoes scrubbed, and
pierced in several places
1 tbl butter or margarine
1 1/2 cup finely-chopped onions
2 tbl minced garlic
1 can chicken broth - (14 1/2 oz)
3 cup milk
1 tsp salt
1/4 tsp freshly-ground black pepper
----------------- TOPPINGS ----------------
Shredded chedder cheese
Crumbled cooked bacon
Chopped scallions
Method:
Heat oven to 400 degrees. Bake potatoes 1 hour or until tender when pierced. Peel when cool enough to handle.
Melt Butter in a 4- to 6-quart pot over medium-low heat. Stir in onions and garlic, cover and cook 10 minutes until soft, but not brown.
Add 2/3 of the potatoes and mash with a potato masher. Add broth, milk, salt and pepper. Bring to a simmer, stirring occasionally.
Cut remaining potatoes in small cubes. Add to soup and stir gently to reheat. Sprinkle each serving with toppings.
This recipe yields 8 one-cup servings or 4 main dish servings.

First thing, Why did you freeze baked potatoes?
Now, since you have frozen baked potatoes, try this:
Thaw potatoes, Slice into 6-8 wedges lengthwise, fry in 350 degree oil until crispy and temperature is above 165 degrees, take out drain and sprinkle Hidden Valley Ranch dressing dry mix over them. Enjoy.
For a more healthy Ranch home fries, you could bake them on a cookie sheet.

Thaw them, scoop out the innards, and mash with a little butter and milk. Season with salt and pepper if they haven't already been, and add shredded cheese, some chopped broccoli, and bacon bits.
Pile the mashed mixture back into the skin, or, if you want to be really fancy, pipe them into a casserole dish so that they're swirled. Sprinkle with more shredded cheese and bake at 350 degrees until lightly brown.
Delicious twice-baked potatoes!

Start by bringing about 6 c chicken broth to a boil, add a diced onion. meanwhile, fry some bacon til almost crisp.
When onion is soft, stir in a paste of water & flour to thicken, and stir constantly until thick. Stir in some shredded cheddar (or swiss) cheese, the bacon (crumbled) and the baked potatoes (in chunks--leave the peel on). Bring back to a boil....
Voila! Cheesy bacon-potato soup!

The best thing to do with extra baked potatoes is to let them cool, then put them in fridge (not freezer) . For the next week they will be good and you can make this EGG-cellent treat:
- take off skins and chop them.
- Fry some onions in oil
- add potatoes and brown.
- Add eggs and toss around ) and add salt and pepper.
I've been making these for years and they are great. The other thing you can do is to make potatoe skins.

We take our leftover mashed/baked potatoes and fry them in butter to a crisp--it takes a little while for the outside to get nice and crispy and yummy. This is NOT a low calorie/fat meal, but it still tastes really yummy!

you can make potato chips
slice them really thin, flavor them with what ever you want then bake them until they are crispy
they wont look like the ones you buy and they probably wont taste good on your first try unless you only use some salt as a flavoring

You can make homestyle mashed potatoes (just mashed potatoes with the peels still in). Mix with butter and milk until you get the consistency you want. If you have sour cream that makes them creamier. Add cheese, bacon bits, chives, ranch dressing, whatever you want!

cut them up and fry them in some oil.scrape out the potatoes and mash with butter,use the skins and brown in toaster oven with cheese on top.

Try this. Slice them into thick slices and deep fry them. Sprinkle on a little salt and... great home fries!!
