Olive oil is fatty! You can't get around that! Cheat- use a salad dressing!

Garlic and olive oil are all you really need but if you want something more, I guess it depends on what kind of vege's you are cooking and what other tastes you like.

You could grate some onion in there as well and add some fresh herbs (or from a spice jar) - parsley, basil. If you like heat, take about 1/4 of a hot pepper, chop fine and saute...you won't really taste the pepper but it will add some kick. Some salt and pepper and you are good to go.

Gently heat olive oil in a pan and throw in finely chopped garlic. Turn off the heat so the garlic cooks in the heat of the oil and doesn't burn. Season with salt and pepper. You could also add fresh parsley to the warm oil (or basil). Drizzle over the veg and serve.

I do this with pasta and it is delicious. I would guess a couple of tablespoons would be enough for 4-6 people. You could also add a sqeeze of lemon juice for a little zing

Ingredients:
Olive Oil (amount depends of amount of veggies, eyeball it)
4 Cloves minced Garlic
Small handfull of chopped fresh parsely
Thyme, Rosemary, to taste, chopped
Pinch of crushed red pepper
Salt to taste
Juice of 1/2 a lemon

Throw it all in a food processor or blender and let it mix together. While veggies are still steamy-hot, pour over, then slap a lid on it. Leave for 2 or 3 minutes. Serve.

**Note: you said "not too fatty", but I think 1/4 stick of REAL butter thrown in there is simply delicious.

Place rough cut vegetables into ovenproof dish, and sprinkle with rock salt and pepper, oregano and basil. Mix some olive oil with parley and coat vegetables, then place into a pre heated oven at 180 deg C for 35 minutes.

In the meantime, crush garlic cloves (2) into a hot frying pan with little olive oil, add finely chopped red onion, and brown off- add finely chopped tomatoes and flat leaf parsley, dish up oven baked veg and pour sauce over to finish.

VEGETABLES STEAMED WITH OLIVE OIL AND GARLIC

SERVES ABOUT 4

INGREDIENTS

* Choice of vegetable, about 2 pounds (see below)
* 2-3 tablespoons olive oil
* 4-6 garlic cloves, peeled and finely chopped
* Salt, pepper, and additional seasonings to taste

Clean vegetables and cut to desired size. Heat olive oil in large skillet over medium-high heat. Add garlic and sauté about 1 minute. Add the vegetables, salt, pepper and other seasonings as desired. Add just enough water to barely cover the bottom of the pan. Cover and steam until vegetables are tender, adding more water if needed. When vegetables are done, remove lid and continue cooking until moisture has evaporated. Serve hot, warm or room temperature.

In a pan saute the veggies in a little bit of olive oil. Toss in garlic cloves..maybe 4 or 5 and saute until golden brown. If you don't have clovesuse garlic powder & saute til cooked through. You can add a little lemon juice or white wine to add a little pizzaz if you like.

Potato, olive oil and garlic dip

Preparation time:
5 mins

Makes 2 1/2 cups


2 cups (460g) mashed potato
3 cloves garlic, crushed
3/4 cup (185ml) olive oil
2 tbsp white wine vinegar
5 tbsp milk
1/2 cup (30g) chopped fresh herbs

Here's how:
1. Combine the potato and garlic in a bowl. Using electric beaters, gradually beat in half the oil, then the vinegar, then the remaining oil.
2. Slowly beat in the milk. Add the herbs and season.

INGREDIENTS
1/4 cup light olive oil
2 tablespoons lemon juice
1/4 teaspoon white sugar
1 clove garlic, chopped
1/8 teaspoon ground dry mustard
DIRECTIONS
In a blender or food processor, blend the olive oil, lemon juice, sugar, garlic and mustard until smooth. Toss with fresh greens or vegetables.

1/2 c olive oil
1/4 c apple cider vinegar
1tbs salt
2 cloves crushed garlic (approx 1 tbs)
1tbs italian seasoning, or thyme
