Shredded cheese freezes very nicely, unlike whole blocks or slices of cheese which crumble after they're frozen and thawed. Packing it in a vaccum-sealed bag is a good idea, if you can, or use a Zip-lock bag and remove as much air as you can before sealing.
The cheese may be a little drier that before it was frozen, so the only caveat is that you might need to add a little extra liquid to a recipe if the shredded cheese is actually incorporated into it. But as a topping, it's fine as is.

We buy shredded cheese in bulk and freeze it, using it within four months or so. The only issue we run into is that when it's a frozen chunk o' cheese, it's hard to do anything with, and you can't heat it up to separate it, because the shreds will melt together. You have to defrost it in the refrigerator.
I see no reason that self-shredded cheese won't freeze as well.

good question, yes shredded cheese may be frozen, but when you use it again you have to make sure its thawed out all the way before you use it again, because it will break into tiny pieces.
we always buy big bags of shredded motzarella cheese from Gordons food service, and then we freeze it, because we make home made pizza alot.

I freeze cheese all the time and I keep it in the freezer until I am ready to use it. I have never had a problem with cheese in the freezer. But then again, I eat a lot of cheese, so it does not stay very long in the freezer or the fridge.

Yes, you can freeze it. Think of the frozen shredded cheese on frozen pizza and other convenience foods. Put it in an airtight container, squeeze excess air out if the container is a plastic bag, and freeze.

Most cheeses can be frozen. Cheddar, mozz, Swiss, manchego, asiago, Parm, Romano, other hard cheeses. Just not the softer ones like feta, brie, camembert, like that. I have like 8 different cheeses in my freezer and they all work just fine when I take them out. Most of the time I don't even have to defrost them.

Yes you can freeze it, just make sure you thaw it in the fridge for a day or two before you use it. It'll be good as new!
