If you have a cajun or ethnic food area in your grocery. Sometimes, by the raw meat section, they have recipe cards or blackening containers; ask the butcher.
You can go to the internet also and googlesearch with key words, and pull up several recipes. True cajun blackening requires special venting in the kitchen, or you will get black soot on everything. I just use the blackening out on the grill outside to remedy that.

Do you mean to make the chicken black? A black spice is black pepper. Than there is ground parsley which will give the chicken a black look. Of course you could always burn the chicken for a real black look.

You can make your own by combining salt, pepper, paprika, cumin, oregano, garlic powder. Add it to the meat (chicken, or fish) you are to cook.
- Fry in an oil or butter.
