When you see a yellow liquid (looks like piss!) or worse, mold!
Otherwise, sour cream keeps very well (if refrigerated) because it is fermented.

I am a former chef and we used to buy it in 10 gallon pails, with all the thickeners and preservitives in it, the only way to know is smell it if it has a really sour smell, mold is a good indication, a yellowy substance on top, the best before date is a good indication.
The best thing is never use a unclean spoon or other kitchen utensil, bacteria other than the one they use to make it can turn it faster, usually it can last 1-2 weeks after opening.

Tip: Sour cream is awesome! Watch the expiration date, and remember, that date is good only if unopened. Once it's opened, I recommend discarding after 2 days, of non-use. Just to be safe. Buy only what you need to prevent under usage, and do not always buy the bigger container at the supermarket, just because it is on sale. That's what they want you to do. The 2 day rule on all foods is the safest plan for yours, and others health!!

Usually I don't keep the box open more than 3 days, that makes me sure that I am not experimenting with quality

If it has started to SEPARATE in any way,get rid of it.if it smells bad,get rid of it. Moldy,I would play on the safe side & say get rid of it.
