Here's my best shot: Asphalt doesn't match because open, delightful, and uncle could all relate to something, like a mind or store.
OR
it could be delightful, because it has 3 syllables instead of 2

Delightful would be my guess because all of the other words start with and only have two vowels but delightful starts with a consonant and has three vowels. Also, all of the words have only two syllables and delightful has three syllables.
