what do i need to make manicotti using chicken and manicotti shells.

INGREDIENTS
2 skinless, boneless chicken breast halves - cubed
1 egg, beaten
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 cup drained, creamed cottage cheese
1/4 cup grated Parmesan cheese
10 manicotti shells
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
1 cup milk
1 teaspoon Italian seasoning
1 cup boiling water
1 cup shredded Cheddar cheese
2 tablespoons chopped fresh parsley
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium skillet over medium heat, cook chicken until opaque and juices run clear.
In a medium bowl, combine cooked chicken, egg, spinach, cottage cheese and Parmesan. Stuff uncooked manicotti shells with chicken mixture. Arrange shells, not touching one another, in a 9x13 inch baking dish.
In a medium bowl, combine soup, sour cream, milk and Italian seasoning and stir until smooth. Pour over shells in dish and spread to cover completely. Carefully pour boiling water around the edge of the dish. Cover tightly with foil.
Bake in preheated oven 60 minutes, or until pasta is tender. Sprinkle with Cheddar and parsley and let stand 10 minutes before serving.

You need the shells, ricotta cheese, mozzarella (I like the shredded Italian cheese blend), eggs, Italian seasonings, and spaghetti sauce.

Boil the noodles. mix the ricotta with 1/2 bag of the cheese, 1 egg, and some Italian seasonings. After the manicotti shells are done, fill them with the cheese mixture. Spray a baking dish with oil and lay the manicotti shells in one layer in the dish. Pour the spaghetti sauce over the filled manicotti, sprinkle the remaining cheese over the sauce. Bake in a 350 degree oven for about 20 minutes or until the chees is melted just right.

MANICOTTI WITH CHEESE FILLING

8 ounces manicotti shells, uncooked
8 ounces mozzarella cheese, shredded
15 ounces ricotta cheese, *drained
1/4 cup grated Parmesan cheese
2 tablespoons chopped parsley
1/2 teaspoon salt
1/4 teaspoon pepper
32 ounces spaghetti sauce

Cook manicotti according to package directions; drain. (Cool in single layer on wax paper or aluminum foil to prevent manicotti from sticking together). Combine cheeses, parsley, salt and pepper for filling; spoon into manicotti in single layer over sauce on bottom of 9x13-inch baking pan; arrange manicotti in single layer over sauce. Cover with remaining sauce. Cover with aluminum foil; bake at 350 F. for about 40 minutes.

Remove foil; bake 15 minutes longer. 6 to 8 servings.

Note: *Cottage cheese may be substituted.

The recipes that others have posted look good, the only difference I do is I add some (maybe 1/2 lb) cooked ground beef to the cheese filling and add mushrooms plus another 1/2 lb of ground beef to the sauce.
Also, it makes it easier to fill the manacotti pastas if they are only boiled for 1/2 of the time the box says. That way they will hold shape for you to fill, and will still come out perfectly after it's baked.

mmm, that and some good garlic bread...mmm, it's making me hungry!

same as above but my family prefers Alfredo sauce with it yummy
